Who doesn’t love chocolate?! Well, for one, Jacob is not a big fan. It gives him headaches and he’s just not a huge fan overall. I found it hard to accept (and even believe) at first, but got over it with time.
I, on the other hand, adore chocolate. Give me a molten lava cake, a chocolate cupcake with chocolate frosting or a piece of chocolate pie and I am in heaven. It also seems like the little baby I am carrying is also a fan (yes! Jacob and I are expecting a little pumpkin in early May).
Last weekend, I was craving chocolate so much I could almost taste it in my mouth. It was a beautiful Saturday afternoon and Jacob was out for the day doing his recertification for ski patrolling. The house was calm, the cat was sleeping, the sun softly lit the kitchen. I put some music on (one of my favourite songs of the moment is The Longer I Run by Peter Bradley Adams), tied my apron around my neck and baked a chocolate bundled cake with chocolate chunks and a chocolate ganache on top. Hello sugar rush!
I discovered that cake about 7 years ago. I found it in a recipe book by Josée Di Stasio (great reference FYI) and since then have baked this cake about once a year. It is my go-to dessert to fix any chocolate craving. The cake gets a nice crust and it’s dense and rich. The ganache just adds to this intense chocolate party in your mouth. You will need a glass of milk while eating a piece and may not want to have a second slice right after, but holy heaven it’s good!
This cake might not be for everyone – you need to LOVE chocolate and have a sweet tooth to really enjoy it fully. So I would only recommend it if you are a chocolate adventurer and can handle eating many chocolate truffles in a row, for example. As I said, not for everyone…

You will need:
8 ounces of semi-sweet chocolate, chopped
½ cup of butter
1 cup of boiling water
2 cups of sugar
2 teaspoons of vanilla
½ cup of sour cream
1 teaspoon of baking soda
2 cups of flour
½ cup of cocoa powder
1 ½ teaspoons of baking powder
a pinch of salt
Step 1: In a bowl, put together 6 ounces of the chopped chocolate with the butter. Put the bowl on top of a pot with 1 cup of boiling water (water-bath). Once the chocolate and butter are melted, add the boiling water, mix well and put the bowl aside.
Step 2: In another bowl, mix the flour, cocoa powder, baking powder and salt together.
Step 3: In a third small bowl, mix the sour cream with the baking soda.
Step 4: In another bowl, beat the eggs with sugar and vanilla. Add this to the melted chocolate and mix well.
Step 5: Pour the chocolate and egg mixture on top of the dry ingredients and mix well with a wooden spoon. Add the sour cream, and then the rest of the chopped chocolate.
Step 6: Pour into a buttered angel food cake pan. Cook at 350F for 50 minutes. Let the cake cool and pour some chocolate ganache on top.
½ cup of heavy cream
6 ounces of semi-sweet chocolate, chopped in small pieces.
Put the chocolate in a bowl.
In a pan, bring the cream to a boil. Pour on top of the chocolate and mix well until the chocolate is melted. Use while hot.
