Happy New Year!! The first day of this brand new year should be highlighted with a great breakfast, one that you can either have with a glass of mimosa or a great coffee. Today I would love to share this blueberry buttermilk pancake recipe.
First, they are easy to do. Second, they look so tasty! Third, they are as good as they look. It is a win-win-win situation. Treat yourself on this new day, and enjoy every bite of it.
You will need:
2 cups of flour
1/3 cup of sugar
1 teaspoon of baking powder
1/2 teaspoon of baking soda
A pinch of salt
2 1/4 cups of buttermilk
2 tablespoons of melted butter
In a bowl, mix together the flour, sugar, baking powder, baking soda and salt.
In another bowl, beat the eggs with the buttermilk.
Add the eggs and the milk to the first mix until you get a smooth texture.
Add the butter and mix again.
With a wooden spoon, delicately add the quantity of blueberries you wish.
With a 1/3 mesuring cup, place the dough in the pan on medium-low heat until the surface is bubbly. Turn the pancake and wait another 1 to 2 minutes, until fully cooked inside.
Keep your pancakes warm, and enjoy!
